my favoured method is to flambé the meat with Calvados then slow cook it in the oven with cider, caramelised onions and carrots. Served on a mash of celeriac and potatos....yum

I think Jing would be an ideal dessert.  I'll bet she makes a better creme sauce, too!!

scott, I agree totally. when mrs danger and I go out for dinner I nearly always miss desert and just go for an espresso and aperitif...usually Armagnac or Cognac but sometimes a single malt

also...in N France there is a thing called the 'trou Normande' where you drink the Calvados shot during the meal to create 'a hole'
